Olly and I absolutely LOVE Asian food, Vietnamese, Malaysian, Korean, Thai, Indonesian, is just a few of our favs. My easy one pot LAKSA is a family hit, and so quick to make. Make it as mild or hot as you like!

Ingredients

Garlic oil (can use any really, enough to cover bottom of big pot)

2-3 tsp Laksa paste

1-2 tsp Red curry paste (depends on hot you like it)

1 tsp Ginger crushed
-
1 tsp Garlic crushed

410ml can Coconut cream
-
1-2 packets Noodles, egg, rice or bean (1 packet per 2 people

Leafy green veges, bok choy, kai lan, kale etc

Carrot sliced
-
Mushroom quartered (optional, Olly doesn’t like them, lol)

Vege stock
-
Hoisin sauce or black bean sauce.

Choice of meat, diced.

Chives or spring onions to garnish
Method

In a large pot, place oil, heated tsp of each, laksa paste, ginger, garlic, red curry paste. Stir until fragrant. Add vege stock, veges and noodles. Let simmer on medium to high.

While simmering cook meat in pan with a little oil and a dollop of hoisin or black bean sauce.

Cook until meat is done and paste is sticky. Your veges should be done and noodles soft now.

Stir through coconut cream.

Tong noodles and veges into serving bowls, then ladle soup in next. Add meat on top and sprinkle with garnish.

Done. Yummo! Enjoy!

NB: If using frozen seafood like fish balls etc, this can be added along with the veges and noodles.
