I wanted to find something that we could make for lunches during lockdown, that everyone in my quite fussy family loved!  These are super yummy and pretty quick to make.  They would be perfect for lunch, snacks or the kids lunchboxes when they can go back to school!

  • 90g butter (cold from fridge, cut into small cubes)

  • 2/3 cup milk

  • 2 cups plain flour

  • 2 tsp baking powder

  • Pinch of salt

  • 1/3 cup tomato paste

  • ½ Red Onion, chopped up finely

  • 1 ½ cups grated cheese 

  • ½ packet of Salami chopped up into smallish bits



  • Preheat the oven to 210* degrees

  • Grab a baking tray and line with baking paper.

  • Put flour, baking powder and salt into a bowl, then add the butter.  Rub the butter between your fingers in the flour until its broken up and resembles breadcrumbs.

  • Pour in the milk and mix with a butter knife quickly.  Start to knead the dough until just together in the bowl.

  • Flour a clean surface and continue kneading for a few minutes until completely together.

  • Roll out the dough with a rolling pin until it’s in a rectangle shape about 38cm x 25cm in size.

  • Spread your tomato paste evenly over the whole surface, leaving a 2 cm edge along the long side closest to you.  Then sprinkle over the chopped red onion and salami evenly.  Lastly sprinkle over the cheese.

  • Starting at the back on the long side, start rolling it tightly towards you.  You may need to release the dough from the board surface using a flat spatula as you go in case it has stuck a little when rolling out.  When you have rolled it up, squeeze slightly to stick the edges together.

  • Cut into 10 even pieces along the roll.  Place face side up on your baking tray and bake in the oven for 18 mins, or until golden and the cheese has melted.  Serve immediately, but they are just as nice cooled down as well.

NB: You could use any ingredients for the filling, just whatever you have on hand or to suit your own tastes.  Bacon or ham, pineapple, chopped capsicum or mushroom.  Just make sure to cut up the filling ingredients really small.
