Kel O's Delish Granola

I decided to make my own Granola mainly because as we went into lockdown, I wanted to make sure I had a nutritious brekky for the family packed with goodness.

Ingredients

 

  • Approx. 3 cups of assorted nuts. I use: Hazelnuts, Macadamias, Almond Slices, Cashews, Walnuts – I chop these a little but not so much they become too fine.

  • Approx. 3 cups of assorted dried fruit.  I use: Apricots, Raisins, Cranberries, Dates

  • Approx. 1-2 cups of seeds – Pumpkin, Sunflower, Sesame, Poppy – I also add some LSA if it was in the pantry

  • ¾ cup of Coconut Thread

  • 4-5 cups of Oats                                        

  • 2 Egg Whites

  • ¾ cup of honey – you could add maple syrup

  • ¾ cup Apple Juice

  • 1 cup of oil – I use Olive Oil or Coconut or a mix of both depending on what I had

  • 3 Tbsp Raw Cacao Powder (optional)

Method

 

  • Preheat oven to 150* degrees Celsius

  • Chop up Nuts – Macadamias, cashews and walnuts I chop in half. And the rest I leave as is.

  • Chop up dried fruit, apricots and dates I chop into ¼’s, the others I leave as is.

  • Place all dry ingredients in a large bowl and toss to combine.

  • Lay out over 2 large shallow oven trays.

  • Pour the Apple Juice into a large measuring jug and heat a little.

  • Add the honey and oil and/or coconut if using.  Mix well to combine. This may need a quick whizz in the microwave if not combined well.

  • Then pour a small amount of the liquid over the dry ingredients in the trays.  I use approx. 1/6 of jug into each tray at each time.  With your hands get in there and combine it really making sure all the oats are getting coated.  If adding cacao I do it at this stage.

  • Continue to pour 1/6 of liquid into dry ingredients until all used up.  If the oats are really wet – then I sprinkle a little more oats and combine with hands.

  • Separate egg whites and whisk to a foam, and pour over the 2 trays, again mix with your hands to combine.

This granola is a little needy, as you have to turn it about every 10 mins and rotate it if your oven is uneven to prevent burning, but it’s REALLY worth it!

I serve each bowl with ½ Banana finely sliced, 1.2 plum and ½ kiwifruit or pear. You can add whatever fruits you have available and pour cold milk over and enjoy!
