Rach's Amazing Afghans

Everyone loves an amazing afghan!  I love this recipe because its super quick and easy to make and is perfect with a cup of tea.


Recipe Details

  • Servings: Approx. 20 biscuits

  • Preparation: 15 mins

  • Cook time: 15 mins



  • 200g butter, softened

  • ½ cup white sugar

  • 1 and a ¼ cups all-purpose flour

  • ¼ cup cocoa

  • 2 cups cornflakes


  • 2 cups Icing Sugar

  • 2 Tbsp Cocoa

  • 1 Tbsp butter

  • 24 walnuts (optional)



  • Preheat oven to 180ºC. Grease or line a baking tray with baking paper.

  • Cream butter and sugar until light and fluffy.

  • Sift flour and cocoa.

  • Stir into creamed mixture.

  • Fold in cornflakes.

  • Spoon mounds of mixture onto the tray, gently pressing together.

  • Bake for 15 minutes or until set.

  • Icing: Sift icing sugar and cocoa into a bowl, add in butter, add in enough hot water to melt the butter and make a smooth icing.

  • When the biscuits are cold, spread chocolate icing over the top and decorate with a walnut if desired.

Perfect with a cup of tea.
