Everyone loves an amazing afghan! I love this recipe because its super quick and easy to make and is perfect with a cup of tea.

Ingredients

200g butter, softened

½ cup white sugar

1 and a ¼ cups all-purpose flour

¼ cup cocoa
-
2 cups cornflakes
Icing
-
2 cups Icing Sugar
-
2 Tbsp Cocoa
-
1 Tbsp butter
-
24 walnuts (optional)
Method

Preheat oven to 180ºC. Grease or line a baking tray with baking paper.

Cream butter and sugar until light and fluffy.

Sift flour and cocoa.

Stir into creamed mixture.

Fold in cornflakes.

Spoon mounds of mixture onto the tray, gently pressing together.

Bake for 15 minutes or until set.

Icing: Sift icing sugar and cocoa into a bowl, add in butter, add in enough hot water to melt the butter and make a smooth icing.

When the biscuits are cold, spread chocolate icing over the top and decorate with a walnut if desired.
Perfect with a cup of tea.
